The carbonation is amazing, the most carbonation I’ve ever had (excluding sparkling), and you can even see it in the boar’s mouth. Sweet lactic acid. Lactic acid cider. Not too sweet, but delicious. An aperitif, perhaps. kun-shu. I didn’t know that natural carbonation is so strong. You could call it a juice. It is like nectar with carbonation. It is better to drink it with this rather than with a meal.

“Bakurai (爆雷) ” is slang for “super”

I looked up the name of the brewery, Rokkasen.

The brewery is Rokkasen, and there are other dry sake brands as well. Interestingly, Yamahoushi also offers different rice varieties. Dewa Sansan, Dewa no Sato, Miyamanishiki, Tamanae, and Tsuyahime are interesting. It would be good to compare them. They are the same specific name junmai ginjo. I have some at home.

It says that Yamadanishiki has a clean taste, Gohyakumangoku has a plump taste, and Miyamanishiki has a soft taste.
Miyamanishiki: gentle taste. The differences are totally different depending on how much rice was polished and what kind of yeast was used.

Sake of the Year 2020 Kura Master “Born”

The label is nice, isn’t it? I looked at the brewery and found that it is located in Kujukuri, Chiba Prefecture, which is hard to imagine sake in Chiba, but it is a local sake. I looked up the brewery and found that it has a 130-year history. Other than that, there is not much detailed information on the official website. The design is stylish. The material used is Omachi.

What is Omachi?

Omachi is a variety of rice that is considered to be the root of sake rice. Toward a full-bodied taste. It is a variety that has been cultivated for more than 100 years, selected and improved in 1866 from an ear of rice brought back by Jinzo Kishimoto of Omachi, Takashima-mura, Okayama Prefecture, on his way home from a pilgrimage to Mount Daisen in Hoki Province. The variety grown today was re-selected in 1921 at the Okayama Agricultural Support Center.

What is Nama-Chozou?

To understand the concept of Nama-Seizou, you have to learn about Hi-ire. I have already explained about Hi-ire in another article, so please refer to that article. Basically, hiki-nuri is done twice. The name of hi-ire changes depending on whether it is done twice or not, when it is done, and so on. Nama-zake, Nama-chozou, and Nama-fukuji also have different flavors.

Nama-chozou is easy to remember, so the kanji character for nama-chozou means “raw” in Japanese. Nama-chozou is stored in a state where it is not heated. When it is taken out of storage and bottled, it is heat-sterilized by adding heat. Therefore, it is fired only once.

I looked it up.

The website of Miyao Sake Brewery is simple and easy to read. I felt that it was a little too simple and the content might be a little thin. It seems that you can buy sake directly from the brewery.
