Japanese buckwheat noodle experience. Very interesting. Freshly made soba is delicious.

Many Japanese people have no experience with soba noodle making. Hence, we went to make it and tried making soba.
Nowadays, with the convenience of the Internet, reservations can be made immediately.

We can eat soba anywhere in Japan. However, making Soba is not a rare opportunity.

Mix

I only vaguely know the process of making them.

Only soba noodles are ground to a powder using a stone mortar. Then put wheat flour and soba flour in a vessel in a certain quantity. The amount of water is determined according to the climate of the day. The water and flour are mixed together.

Extend

Japanese soba

Well kneaded. Combine into a single mass, just like bread.

Sprinkle buckwheat flour and gradually stretch the dough with a rolling pin. This is one technique.

When the dough becomes round, it is dusted with buckwheat flour again and stretched into a square shape.

Arrange

Now we will fold it to cut it.

Finally, we cut them with a special knife.

Now soba noodles are ready. Each person boils it and takes it home to eat.

I went home and boiled them, but it takes a few tries to get the hang of boiling them. But it is an interesting and good experience.

Sushi bar operated by restaurant. All-you-can-drink miso soup

There are signs on the road every so often. I have always been curious about “Toto Ya Michi.”
I had some time to kill, so I decided to hit it.

Official site Totoyamichi

The entrance is made of a Japanese family restaurant.

The restaurant is firmly structured as a revolving sushi restaurant.

menu

Simple content. Happy Hour: Beer 231 yen. Cheap.

I ordered a snack set. 682 yen

All-you-can-drink miso soup until a certain time

It’s not bad, but if you think of it as sushi at a family restaurant, it’s good enough to eat.

A rather young chef is making sushi.

In the afternoon, he was replaced by a veteran chef.

I ordered Tempura and Hakkaisan. The sake selection at this restaurant is well-known, but as an enthusiast, I would be happy to see more sake that is not well-known to the public.

I had a full stomach today.

A rare climbing point unknown to people.

About 1 hour from Tokyo. Also a few minutes from Yokosuka U.S. military base by train. Get off the bus and hike for a few minutes. The sun shining through the trees is pleasant.

Mt.Takatori

The height is not so high, so walk for a few minutes.

It was already there, right by the entrance, a natural rock-climbing wall.

Map routes vary.

A few minutes’ walk from the entrance is a wall of even higher difficulty.

Finally, we arrived at our destination this time.

You can also rock climb on this Buddha statue, but it is dangerous and there is a warning sign. A good hiking course for a walk.

Sake and Soba: Japanese Food Culture. The interior is decorated in a traditional way.

Soba is a representative of Japanese food. Soba goes well with sake, and eating soba while drinking it is a special treat.
Many restaurants purchase noodles, make soup, and serve it as a product.

This restaurant has a mortar to grind the buckwheat seeds, and they make their own buckwheat noodles.

There are still few customers due to the corona, but they ask for one dish and eat soba.

sake

Many of the restaurant’s sake are major staples. I asked for Akabu.

Many of the restaurant’s sake are major staples. I asked for Akabu. Other sakes I have previously drank and reported on include Hakkaisan, 〆(sime)hari Tsuru, Houou Biden, and others.
It is rare to find a restaurant that grinds buckwheat noodles from a mortar, so if you come to Japan, you should definitely find one and try it with sake.

Authentically delicious sushi bar in Yokosuka

A fisherman is opening a sushi bar. So I went there. The place is directly connected to Yokosuka Chuo Station.

Yokosuka is an American military base, and there are many Americans walking the streets. This sushi bar also had many Americans as customers.

What makes this sushi bar unique is that it is owned by a fishmonger.

It is a restaurant where professional fish connoisseurs always offer fresh fish and rare fish as well.

The restaurant features a storefront that sells take-out sushi box lunches. It is a rare case for a typical sushi bar to sell sushi as a bento.

It is a very unique restaurant, unlike most sushi restaurants.

It tastes fresh and the stuff is good. If you have business in Yokosuka U.S. military base, you should go to this restaurant.

I’m an international sake sommelier.

I unexpectedly and somewhat unexpectedly obtained the 3rd level of the Japanese Sake Certificate last year, and I wanted to obtain the 2nd level but couldn’t due to work, so I chose the International Sake Tasting Certificate, which is cheaper than the Japanese one. I started in February of this year. I read through the English version of the book and wrote the report by myself late at night with a glass of sake in my hand. The answers are written in the book, so I spent three months writing them down in English. Now that I’m officially recognized, all I have to do is to go on a drinking frenzy. I have to exercise as much as I drink and eat.

I also won the lottery and went out for free drinks.
