这个周末也悠闲地和日本酒共同度过想着随便散个步在银座新泻的试营店发现了日本酒色彩一下就吸引到我了,(上善若水)冷制酒日本酒在冬天酿造完将酒取出之后,为了防止劣化,会进行一种叫做(入火)的加热处理。在冬天被取出后,不进行入火的日本酒就叫做生酒。所谓的「ひやおろし」就是在制造日本酒的阶段,不进行第二次的入火的日本酒。而在冬天取得的日本酒,保存到春天以后,再进行这个入火然后储藏起来。到了秋天以后,外面的气温和储藏库的温度逐渐趋于一致时出现的日本酒的「ひやおろし」,据说是诞生于江户时代。被指为表示日本酒温度的「冷や」(常温温度)的状态「卸す」(销售),这就是他的语源。上善如水 冷やおろし (秋限定商品) 在超市卖的上善若水,就算跟纯米酒相比,也会感到少许香气的增强,日本酒独特的酸味也比一般的纯米酒能感受的多一些。虽说是被这个红瓶子吸引买了这种,但是只瓶子是红的而已,里面和平常是一样的。是透明的因为是纯米吟酿,所以不管是和清淡的菜肴还是和浓口的菜肴,都很合得来秋刀鱼加上萝卜泥吃起来应该跟这酒很搭就算作为餐前酒来使用也是正正好好的清淡的温和口感浅尝辄止。就是这种的味道很推荐好好地冷却之后再饮用
