Sake season finally begins this season. The number of bottles is limited, so we were able to come across a precious bottle at the right time.

Everything sounds better when it’s “best,” doesn’t it? The water was explained enthusiastically that it is well water that has been coming down the underground water vein for 30 years. There is a Suntory factory and another manufacturer’s wine factory nearby.
Clear and easy to drink. It’s a fragrant sake. Fruity sweetness to the end. Aperitif or in-between-dinner drink. It tastes like a white wine with a touch of alcohol after the sweetness. It goes well with strong dishes. Mild and easy to drink, recommended for beginners. It is treated in the same way as white wine.

7-Eleven Burrito
Seven’s burrito. It is one of my favorites, but it goes surprisingly well with sake. It is a dish with a strong flavor, but when paired with sake, the alcohol taste diminishes and the sake goes on, making it a surprisingly good pairing.

About Natural Yeast
I did some research. The brewery is also a historical brewery and has been around for 300 years.

Did you notice it? The yeast on the front label, it is a flower yeast. That is what makes Amabuki unique. Originally, yellow yeast, a type of yeast mold, was used in many cases, but begonia yeast is a natural yeast found in flowers, which gives it a distinctive flavor. There are 14 other types, including nadeshiko, cosmos, and strawberry.

Uh-oh. Despite the aroma, the taste is complex, like junmai sake. The taste of the flower yeast is also added and the habit is amazing. It is characteristic. This tastes different from koji that is used a lot. It seems to go well with strong flavored food. If the taste is light, the habit of sake will win.

I had an uncontrollable craving for wieners and bought the Gold Series from 7-Eleven. It went surprisingly well with Amabuki sake.
Today, too, I am drinking sake by myself. As usual, I’m drinking sake that I’m interested in. It’s been one year. Thank you very much for those who have been watching this site from the beginning. I feel that the sake season has finally started when the autumn hiyaoroshi (autumn harvest) is released. Sake liquor stores are also crowded with various brands of sake. It is natural that after the rice harvest, sake is made to support the farmers. In the old days, it used to be hard work, with hands plunging into cold water in biting temperatures from early in the morning. In recent years, with air conditioning and electricity, the harshness of the natural world seems to have been slightly lessened, but the physical labor seems to have remained the same.
Putting those feelings aside, I just want to enjoy the food and go to the bar today!
I chose it for the label design. I did some research.
Yui is the 16th post town on the 53 Stages of the Tokaido Highway, and was even depicted in ukiyoe paintings by the Edo period painter Hiroshige Utagawa. In 1912, Kinzo Mochizuki and his son Yoshimatsu, who were engaged in forestry and sericulture in the mountains north of where the brewery is now located, founded a sake brewery out of their passion for sake. When they started brewing sake, they searched for water suitable for sake and set up their brewery beside the Kanazawa River.
This is a no-muss, no-fuss beer. Good sharpness. Easy to drink. It may take some time for beginners to get used to it, but once you do, it is very tasty. It seems to go well with both fish and meat. It is a drinker’s dream.

For today’s snack, we wanted to try a pairing, so I went all out and had Wagyu beef steak!
I tried to see if sake and wagyu steak really go well together. I discovered that it was a revolutionary match. I discovered that modern-flavored sake in a wine glass goes well with Wagyu beef.
I visited a traditional Japanese sushi bar because I suddenly felt like going there. It is a conveyor-belt sushi bar where sushi is made in front of your eyes, not by a machine.

The best thing about this restaurant is that all sushi is uniformly priced.
The interior is broken down and a bit cramped, but this is what a revolving sushi bar should be.

We don’t see it these days, but it is a traditional teacup. In the old days, sushi bars had teacups with kanji characters of difficult fish written on the teacup. We don’t see these days in sushi bars, though.
Frankly speaking, even Japanese people cannot read most kanji.
