All the rice used is Yamadanishiki. Sanwari Kubun means 39% milled rice ratio. The lower the milling ratio, the higher the price of sake.
It takes a lot of skill to go from brown rice to 39% white rice, and it takes a lot of ingredients because the amount of rice is smaller.

Dassai Taste Evaluation

It feels sweeter than the others. It’s like sweet comes after spicy without the miscellaneous taste. Smelly fish. It is just right as a mouthwash for fatty fish. I would like to have more spiciness because it has a strong sweet taste.

Today’s snack

I grilled the meat from Costco over charcoal. Surprisingly, the charred corners are just the right combination of sweetness.
