Comment: A
CEL-24 is the name of the yeast.
It came up when we were talking about the pull and sharpness of white wine and sake.It has a crisp sweetness and a beautiful pull. Perfect for a mealtime sake.

Comment: B
It has a pineapple smell and sweetness typical of CEL-24.
It is more smooth than the sweetness of Kameizumi and Kaygetsu, and the bitterness is cut off by a nice sourness. Delicious!

It has a peculiar taste. First-time sake drinkers may have some resistance to it. It has a strong sweet and sour taste. Even after drinking it down, it still has a strong alcohol taste. When chilled, it tastes more like wine. The taste is different depending on one’s taste preferences. It does not go well with seasonings, regardless of how strong or weak the flavor is. It is best as an aperitif on its own.

Today I paired it with roast beef salad.

This time it was not good. It doesn’t go well with the seasonings…
