Today, too, I’m drinking alone in the dust.

Today, while wandering around, I came across Urakasumi again. I often see Urakasumi at izakaya (Japanese style pubs) and also at supermarkets, but this time the label was different.

Urakasumi Tokubestujunmai

Special freshly pressed sake The label looks like something you haven’t seen before.

Moreover, it is fresh, unpasteurized sake from Miyagi Prefecture, a rice-producing region.

Yeast is an important factor in determining the flavor of sake when making sake

This yeast was isolated in 1965 from the Urakasumi Sake Brewery in Miyagi Prefecture. It is suited for sake compounds that are slowly controlled at low temperatures. It has a high aroma and is suitable for ginjo-shu. Also known as “Urakasumi yeast” or “first generation Miyagi yeast.

This is a special junmai with 60% milled rice; it was packed in January and left for about half a year before drinking, so the freshness is a little weak. The sugar content is more than 12%, but it is not so sweet. When chilled, the taste is surprisingly refreshing, and when warmed to about 20°C (68°F), the acidity and umami come out and the flavor becomes fuller and richer. The aftertaste of acidity and bitterness is surprisingly good. It can be served cold as it is, or warmed up with various dishes.

When opened, this sake has a flowery aroma. It has a soft and medium mouthfeel. It has a fruity and sweet flavor. It tastes like ripe peaches with a hint of nuttiness. It has a sour aftertaste and is very refreshing.


Urakasumi Tokubestujunmai Taste Evaluation

Very sweet and easy to drink. Fruity taste. It has a good balance and seems to go well with sweet, salty, and fatty foods. Recommended to drink cold. If you drink it hot, it may be too sweet. There is almost no distinctive alcohol taste. It is easy to drink like a fruit wine, so it is suitable for beginners.

Salami. It comes in a mini size for snacks. Surprisingly, it goes well with Urakasumi, even if it is fatty.
