Today’s Sake: Sawanoi Junmai Extra Dry
I chose Sawanoi because I thought its dry style would pair well with tuna. Sawanoi is a brewery with a facility in Tokyo that’s easily accessible from the city. What’s more, it produces sake that won a gold medal at the 2026 (Reiwa 7) National New Sake Competition. “We were awarded a gold medal at the 2026 (Reiwa 7) National New Sake Competition (National Research Institute of Brewing).”
Now, as for the taste… take a big gulp
It has a consistently reliable flavor—the same taste I’ve enjoyed for years. It has a crisp, clean spiciness, with a refreshing finish that lingers, complemented by the natural sweetness of the rice. It pairs well with fish; rather than just complementing the meal, it feels like the sake washes away the fishy odor. Since it’s not too sweet, it’s a sake you can enjoy for a long time. It pairs exceptionally well with sashimi and sushi.
There are this many dishes made with tuna alone.
This is a fantastic restaurant with an abundance of tuna. Reservations are required. The sashimi made from rare cuts is incredibly tender and delicious. Personally, I prefer to eat tuna as sashimi, so I felt it was a bit of a waste to have it fried. Although the menu consists mostly of tuna, it’s a thoroughly enjoyable experience. They also have a wide variety of sake to enjoy.
