From the multiple selections, I started with “Saku”. It is a new sake. The pattern is Japanese blue. It is a new sake made in 2022.
It was fermented and manufactured last year, so the year is 2022 because of the difference in the time standard.

We received the second place in the world sake brewery ranking for the year 2022.

The Sake Brewery Ranking honors the sake breweries that received the most recognition in sake competitions held in Japan and abroad during the year.
In fiscal year 2022, our company received the second place in the ranking.

I’ve had spicy ramen in HOT. Spicy ramen restaurant in Shinbashi, Tokyo

I have recently developed a taste for spicy food, and today I went in search of spicy ramen in Tokyo.

The name of the restaurant is “Natsuboshi.”
There are many Chinese restaurants in Japan, but unlike authentic Chinese cuisine, the flavors of these restaurants are different from those of the real thing and more suited to Japanese tastes.

Therefore, I am searching for a restaurant that serves delicious and spicy food that is close to authentic Chinese food.

I did it. The spicy tantanmen I had been waiting for.

It wasn’t as spicy as I thought it would be. Too bad. I ate it while sweating, though. It was delicious.

Review

I visited for the first time on a Sunday afternoon. It seems there’s another branch of the same chain in Ichigaya. While many restaurants in this area (Shinbashi) are closed on weekends and holidays, I was grateful this one was open.
The Sichuan-style tantanmen comes in two varieties: “Original Blend” and “White Sesame.” I chose the former. You can select the level of spiciness and numbing sensation from three levels each (1-3), so I chose level 3 for both. True to its “Sichuan” name, it’s a delicious, authentic-style tantanmen with that signature spicy and numbing kick, achieved by combining sesame paste with chili oil and Sichuan pepper. (Note: Technically, authentic Sichuan tantanmen is usually served dry, without soup. Personally, I enjoy both dry and soup-based versions, so I won’t dwell on that point.)

At a liquor store in Tama City, I picked up a bottle of sake with a stylish label that I had not seen very often.

The brewing water is the water used as the base for making sake, and it is also used to wash the rice used to make the sake.

It has a shwishy feel. It is natural gas. This is only found in Arabashiri, and the fermenting gas is being released rapidly. No bitterness. It is easy to drink.
