Daisekkei
Another Cozy Night of Drinking Alone
Today I stopped by my favorite standing bar. By chance, someone from the Daiseikei brewery was there, so I asked them all sorts of questions.
16% ABV
It has a sweet aroma. The first sip is very fruity and easy to drink. As the brewery representative mentioned, it’s reportedly the most popular of the three varieties. It’s a sake with a wine-like character that women tend to enjoy. It’s also suitable for first-time sake drinkers. It has a mellow mouthfeel, making it ideal as an aperitif.
Junmai Ginjo Nama Genshu, Direct-Drawn Miyama Nishiki: It has a unique aroma and a distinct, rich sweetness with a characterful flavor reminiscent of apples. There’s a hint of dryness in the finish. When drunk on its own, it tastes sweet. Beginners may find the alcohol content quite strong. It has a clean finish and a velvety texture on the tongue. Best enjoyed with a meal.
Junmai Ginjo Nama Genshu—Omachi: This is the only sake in Nagano Prefecture made with Omachi rice. It’s a crisp, easy-to-drink sake that pairs well with meals. It seems like it would go well with fatty meats. The sweetness is subtly restrained, making it easy to finish the bottle.
Shumoto no Sato
It’s dry, but you can really taste the alcohol. The flavor is somewhat complex. The spiciness lingers on the tongue—best suited for seasoned drinkers or intermediate drinkers. It seems like it would pair well with sashimi. The alcohol is quite pronounced. It has a slightly distinctive aftertaste.
What Is Unfiltered Raw Sake?
The Basic Meanings of the Three Elements
Heat Treatment: While unfiltered raw sake is often distributed as “unfiltered raw sake” that has not undergone further heat pasteurization, some products do undergo heat treatment. [1, 2]
Unfiltered (Muroka): Refers to the process of not filtering the sake through a filter, such as charcoal. This preserves not only any off-flavors but also the sake’s natural umami and aroma.
Genshu: Refers to sake that has not undergone “water dilution” to adjust the alcohol content after pressing.
Taste and Characteristics
Rich and robust flavor: Since it is not diluted with water, the alcohol content is high—around 17–20 degrees—allowing you to directly experience the deep umami and richness inherent to the rice.
Rich Aroma: The vibrant aroma, which is not stripped away by filtration, remains intact.
Color: While typical sake is colorless and transparent, unfiltered sake has a faint yellow or golden hue.
This is Mr. Nakajo from Daisekkei Shuzo Co., Ltd. He told us all about the various characteristics of their sake.
I had quite a bit to drink. It was delicious. I wonder what I’ll drink tomorrow?
