Jiro-style ramen with black ramen

A shop in Toyama Prefecture that blends Jiro-style ramen with black ramen. I’ll tell you about a ramen shop that’ll fill you up.

Black Ramen

Toyama Prefecture’s specialty “Black Ramen”

The reason Toyama Black Ramen is black is due to its generous use of dark soy sauce and the large amount of coarsely ground black pepper used as a topping. This originates from its roots as a “side dish ramen” created during the post-war reconstruction period to replenish the salt lost by sweating laborers.

This calorie bomb makes me lose myself. I slurp relentlessly, chew the noodles, then slurp again. Repeat. The occasional chashu makes my mouth dry, naturally drawing me back to the soup. Lighter than it looks, the broth refreshes my palate, ready for more noodles.
I sweat while eating. Dieting is a useless word. I’ll eat voraciously.
I can’t even manage half the portion. I’m just struggling to eat.
That’s what Jiro-style ramen is all about. When it comes to ramen that’s popular for its flavor impact, addictive quality, and satisfyingly hearty portions, the “Jiro-style” is the quintessential example.Heaping servings of vegetables and garlic, paired with thick, chewy noodles. Now, two ramen styles beloved by fans have teamed up to create the ultimate ramen.

Its name? “Gutsy Black.” This is the place.
