This unique Jiro-inspired spot has its main branch in Shimbashi. The small ramen at 950 yen comes with a generous 200g of noodles and three slices of pork. The ordering method is slightly unconventional—you declare your choices when placing your ticket on the counter. Garlic is available on the table, so your options are just three: extra veggies, extra oil, or extra broth. Even though I’m no newbie to this place, I still flustered over the procedure (wry smile).

The signature look here is the small bowl filled to the brim with broth, packed tightly with noodles. The noodles are extremely thick, chewy, and flavorful. The soup looks robust like the noodles, but surprisingly light when you taste it. Adding the special table-top chili flakes (homemade chili) or vinegar changes the flavor, gradually enhancing the taste and boosting the deliciousness. By the end, I added too much chili and broke out in a sweat, but it was the kind of inspiration I love – delicious.
