The best and most popular sake in Yamagata, recommended by a knowledgeable staff member.

The year of the Master is just around the corner.

I’ve been wanting to visit the Hasegawa Sake Brewery near Mitsukoshi in Nihonbashi.　

I took a look around, looking for something that would go well with a heated sake.

The shopkeeper recommended

Jokigen Junmai Ginjo

I was told that it was good both warmed and at room temperature,

and that it was simple to drink.

Sakata City, Yamagata Prefecture. I heard they also offer sake brewery tours.

The bottle cap is old style.

More wine than sake. Fruity sake Junmai Ginjo, polished to 55% rice, half and half rice and ginjo.

The taste is good, the mouthfeel is gentle and fruity, and it is suitable for women.

On its own, it is as light as an aperitif.

It goes well with a small amount of lightly flavored food such as small bowls rather than strong flavors. It has a light taste, more like a light wine or fruit wine than a sake.

This goes in sooo well without you even noticing.

I found and bought this at a famous tableware wholesaler in Japan called Kappa Bashi.

It’s been a while since I’ve heated it up.

Handmade and lukewarm.

Yes!

It’s better chilled than warmed. It’s a little too sweet for me, personally.

The acidity is reduced, making it easier to drink, but it’s too sweet, and it comes off as heavy-handed.

There may be some people who like it this way, but

I think it is best served cold or at room temperature for a good sweetness.
